I'm not sure about buffalo, but Elk is more lean than beef in general.

Yes. If they've been eating real wild animal food instead of that corn shit they feed supermarket beef, they're definitely better for you (particularly the fat content - much better types of fat).

Two completely different animals, but in American packaging one = two. The typical bison meat is often labeled "bison" or "buffalo". Which ever the producers want to call it. Either way its the same meat, unless your getting some exported meat from Asia or Africa, it's highly doubtful you are eating "actual" buffalo.
